Annie’s Favorite Heart Cookies

I have an American Girl Doll collection and I also love my American Girl cook book! One of my favorite new recipes to try from that cookbook was jam heart cookies which places a cookie heart frame over another cookie with a jam filled center. The directions made it easy and it was fun to do! Be sure an adult is nearby to help you take the hot cookie pans in and out of the oven!
Raspberry Jam Heart Cookies
(from the American Girl Cookbook)
10 large cookies
Ingredients:
3/4 cup sugar
1 cup unsalted butter (room temperature)
1 teaspoon vanilla extract
6 tablespoons seedless raspberry jam
1 egg
2 cups all purpose flower
1/2 tablespoon baking powder
1/4 teaspoon salt
powdered sugar for dusting
Instructions:
1. Preheat oven to 375 degrees. Line two cookie sheets with parchment paper.
2. Using an electric mixer, cream butter, and sugar together in a large bowl. Beat in egg, vanilla, salt, and baking powder.
3. Add flour slowly, blending in the last amount by hand.
4. Sprinkle your work surface with flour. Using a rolling pin, roll the dough out to 1/4".
5. Using two heart cookie cutters, one larger than the other, cut out the larger cookie shape and then the smaller cookie shape WITHIN the larger cookie. This makes a heart "frame" of the larger cookie. Gently lift out the smaller-formed cookie from the larger shape and place both on the cookie sheets (The size of your larger heart cookie cutter will determine how many cookies you can make. )
6. Bake for 10 min. or until lightly golden brown. Cool for 5 minutes.
7. Spread jam on smaller cookies and top with a large heart-shaped cookie frame.
Before serving, sprinkle with powdered sugar.
Makes a very pretty cookie!
