Margie’s Apple Cake

I baked a lot during the first year of the pandemic but I’m cutting down on it now. I found that the Apple Cake was a bit dry which is why I started subbing apple sauce for some of the oil. It is a trick my mother taught me. I got the recipe from her.
APPLE CAKE
Ingredients:
1 + 1/2 cup oil (or partially substitute applesauce for more moist cake)
1 cup sugar (recipe calls for 2c but I always reduce by half)
3 eggs
3 cups flour
1 cup walnuts
1 cup raisins
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon vanilla
3 cups peeled and cored sliced Delicious apples
Instructions:
Preheat oven to 350 degrees.
Beat oil and sugar (and applesauce). Add eggs and vanilla.
Sift together flour, cinnamon, and baking soda. Add remaining ingredients.
Turn mixture into greased and floured 9-inch tube or Bundt pan. Bake one hour or until done. Serve at room temp with or without ice cream.
