Italian Peppers and Onions

This is a favorite Italian dish because it's simple to make and delicious to eat in different ways, hot or cold, summer and winter! Serve as a side dish, add cooked and sliced sweet Italian sausage and serve as a main dish with rice, serve on a Kaiser roll for a great sandwich. This is a perfect picnic dish because it can stay out in the heat without going bad. In fact, this was what we took to Coney Island beach when I was a kid growing up in Brooklyn. The peppers and onions were in a container and the Kaiser rolls, fresh from the bakery, in a bag. We put them together when we were ready to eat. Yum! Today, we do this on car trips!
Peppers and Onions
Makes 6 servings
Ingredients:
3 tablespoons virgin olive oil
2 large yellow onions, sliced fairly thin but not too thin
5 very large green bell peppers, sliced in about 1/2 slices
salt and pepper
1 8ou can tomato sauce
Instructions:
Heat olive oil in large frying pan.
Slice onions fairly thin and add to pan that is set over slightly below moderate heat. Saute onions very slowly (this is the trick to making this dish delicious!). When the onions begin to caramelize and are a nice brown, add the bell peppers. Sprinkle with salt and pepper. Stir peppers and onions and continue cooking until peppers begin to soften a bit. Then drizzle tomato sauce over all. Place a lid over the fry pan keeping it slightly askew (not tightly covered). Steam the peppers until they are soft but not so soft that the skins are beginning to peel off. After cooking, if needed, sprinkle to taste with a bit more salt and pepper to taste.
Peppers can be serve immediately hot. They are equally good right out of the refrigerator either as a side dish or in a sandwich.
They will store well for several days. Enjoy!
